Apple Pecan Salad
This is a recipe I found after a quick internet search and it sounded like the perfect fall salad. I’m excited to make it to have as our one healthy item this Thanksgiving ;)
Apple Pecan Salad:
6 cups torn mixed salad greens
1 cup chopped Gala apple
1/3 cup sweetened dried cranberries
1/3 cup candied pecans (I have a recipe for candied pecans in this blog as well. They are SO yummy on this salad; you could also add them to a charcuterie board, or snack on them all day leading up to the Thanksgiving meal!)
1/4 cup fresh lemon juice
3 tablespoons olive oil
1 tablespoon honey
1/4 teaspoon salt
1/2 cup crumbled blue cheese (2 oz)
1) In a large bowl, toss salad greens, apple, cranberries, and pecans.
2) In a small bowl, stir lemon juice, oil, honey, and salt with wire whisk until well blended.
3) Drizzle dressing over salad, toss to coat. Sprinkle with blue cheese.
